Ingredients
- 500g shortcrust pastry
- 350g mincemeat
- 1 egg
- icing sugar
Method
- Preheat the air fryer to 180°C.
- Roll out the pastry on a lightly floured surface until approximately 2.5cm thick.
- Use an 8-10cm round biscuit cutter to stamp out as many discs as possible, then reroll any scraps and cut out more discs.
- Spoon 1 tablespoon of mincemeat onto the center of half the pastry discs. Leave the other half plain.
- Cut small stars from the remaining pastry discs (if desired) and set aside.
- Beat the egg and brush lightly around the edges of the mincemeat-topped pastry discs. Place the lids on top, some with stars and some without.
- Brush a little egg wash over each pie to help seal the edges.
- Use a fork or fingers to create a crimped edge around each pie (optional).
- Arrange the pies in the air fryer basket, cooking as many as you can at once. Cook for 8-10 minutes.
- Turn the mince pies over and cook for an additional 2-3 minutes, or until golden brown.
- Dust with icing sugar before serving.
