Ingredients

  • 200g sausages
  • 4 rashers of bacon
  • 100g mushrooms
  • 1 medium tomato, halved across the equator
  • 2 hash browns
  • 1 egg
  • 250ml baked beans (optional)
  • Butter for serving

Method

  1. Preheat the air fryer to 180C.
  2. Slice a medium English muffin in half and remove the centre, then toast for 5-6 minutes. Set aside.
  3. Place the mushrooms in a bowl and drizzle with 15ml olive oil. Season with salt and pepper, then stir to coat. Add the mushrooms to the air fryer and cook for 4 minutes, stirring occasionally.
  4. Meanwhile, crack an egg into a small cup or ramekin. Place the toasted English muffin half on a plate, then pour the egg over it.
  5. Add the sausages to the air fryer with the mushrooms, along with the bacon. Cook for 2 minutes, then add the hash browns and continue cooking for another 4 minutes.
  6. Use tongs or a spatula to remove any excess moisture from the beans (if using). Add the baked beans to the air fryer and nestle them alongside the egg muffin.
  7. Continue cooking for an additional 8-10 minutes, until the egg is cooked through and the sausages are golden brown.
  8. Serve hot, with butter melted over the top. Garnish with chopped fresh herbs if desired.
