Ingredients
- 250g plain flour
- 250g strong white bread flour
- 7g sachet fast-action dried yeast
- 15g caster sugar
- 375ml whole milk
- 60g butter, softened
- 50g light brown soft sugar
- 5g vanilla extract
- 2.5g cinnamon powder
- 40g butter, softened (for icing)
- 75g soft cheese
- 150g icing sugar
Method
- Heat the oven to 180°C (Gas Mark 4) and preheat the air fryer to 170°C.
- Combine flours, yeast, sugar and salt in a stand mixer. Mix until well combined.
- In a separate saucepan, heat milk over low heat until warm. Remove from heat and whisk in softened butter and egg.
- Pour egg mixture into flour mixture. Knead on low speed for 8-10 minutes or until smooth and elastic.
- Transfer dough to a lightly floured surface and roll out to a 25cm square. Spread cinnamon mixture evenly over the dough, leaving a 2.5cm border around edges.
- Roll the dough into a tight spiral and cut into six even pieces. Arrange on prepared baking sheet in a circle or rectangle shape, depending on air fryer tray size.
- Cover with a clean tea towel to keep buns soft. Leave for 20-30 minutes, until puffed up and doubled in size.
- Heat the air fryer basket by placing an empty tin inside. Bake cinnamon rolls in the preheated air fryer at 170°C for 12-15 minutes or until golden brown.
- Meanwhile, make icing by beating softened butter with soft cheese, icing sugar and vanilla extract until smooth.
- Remove cinnamon rolls from air fryer and brush with warm milk. Spread a layer of icing on top of each bun.
- Allow icing to set for 30 minutes before serving.
