Ingredients

  • 150g vegetable oil
  • 175g self-raising flour
  • 0.5tsp ground cinnamon
  • nutmeg for grating
  • 200g light brown soft sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 100g pecans
  • 150g carrots
  • 50g raisins

Method

  1. Preheat the air fryer to 160C.
  2. Combine the flour, cinnamon, and a good grating of nutmeg in a bowl. Mix well.
  3. In another bowl, whisk together the oil, vanilla, and eggs. Add the dry ingredients and mix until combined.
  4. Fold in most of the chopped pecans (reserving some for decoration), the carrots, and raisins.
  5. Pour the mixture into a 20cm cake tin or 1 litre loaf tin that fits in your air fryer.
  6. Cook in the air fryer at 160C for 25-45 mins, checking after 15 mins. If the top browns too much, cover with foil.
  7. Check the cake is cooked by inserting a skewer; it should come out clean.
  8. Leave to cool in the tin for 15 mins before transferring to a wire rack to cool completely.
  9. Once cooled, spread the icing over the top and decorate with remaining pecans.
